Ideologies are ways of organizing large swaths of life and experience under a set of shared but unexamined assumptions. This quality makes an ideology particularly hard to see, at least while it's exerting its hold on your culture. A reigning ideology is a little like the weather: all pervasive and virtually inescapable.

Ecology also teaches that all life on earth can be viewed as a competition among species for the solar energy captured by green plants and stored in the form of complex carbon molecules. A food chain is a system for passing those calories on to species that lack the pant's unique ability to synthesize them from sunlight.

Once you introduce the issue to young people and suggest to them that they have the ability to vote with their forks, either by positively going for certain kinds of foods or rejecting other kinds of foods, they realize that this is a responsibility and an opportunity to shape the world a little bit by their own choices.

You know what a lima bean does when it's attacked by spider mites? It releases this volatile chemical that goes out into the world and summons another species of mite that comes in and attacks the spider mite, defending the lima bean. So what plants have - while we have consciousness, toolmaking, language, they have biochemistry.

The green thumb is equable in the face of nature's uncertainties; he moves among her mysteries without feeling the need for control or explanations or once-and-for-all solutions. To garden well is to be happy amid the babble of the objective world, untroubled by its refusal to be reduced by our ideas of it, its indomitable rankness.

Every peasant cuisine has incredible ingenious tricks for getting a lot of nutrition out of a small amount of ingredients. There are people who don't have the money to invest in better food, but perhaps they have the time. There's a trade-off: The more time you're willing to put into food preparation, the less money you have to spend.

Animals raised on corn produce fattier meat, but it's not just that it's fattier, it's the kinds of fats. Corn-fed beef produces lots of saturated fats. So that the heart disease we associate with eating meat is really a problem with corn-fed meat. If you eat grass-fed beef, it has much more of the nutritional profile of the wild meat.

A cow out on grass is just an incredible thing to behold... Cows and other ruminants can do things we just can't do. They have the most highly evolved digestive organ on the planet, called the rumen. And the rumen can digest grass. It takes grass, cellulose in grass, and turns it into protein, very nutritious protein. We can't do that.

There are certain products that it's worth buying organic just because the alternatives have so much pesticide. There's a list of the dirty dozen that you can get off the Web. Strawberries, potatoes. A handful of crops that have very high pesticide residues if you don't buy organic. If you eat that a lot, that's a good place to invest.

The entire history of baby formula has been the history of one overlooked nutrient after another...and still to this day babies fed on the most "nutritionally complete" formula fail to do as well as babies fed human milk. Even more than margarine, formula stands as the ultimate test product of nutritionism and a fair index of its hubris.

One of the powerful things about the food issue is that people feel empowered by it. There are so many areas of our life where we feel powerless to change things, but your eating issues are really primal. You decide every day what you're going to put in your body and what you refuse to put in your body. That's politics at its most basic.

Ripe vegetables were magic to me. Unharvested, the garden bristled with possibility. I would quicken at the sight of a ripe tomato, sounding its redness from deep amidst the undifferentiated green. To lift a bean plant's hood of heartshaped leaves and discover a clutch of long slender pods handing underneath could make me catch my breath.

Very simply, we subsidize high-fructose corn syrup in this country, but not carrots. While the surgeon general is raising alarms over the epidemic of obesity, the president is signing farm bills designed to keep the river of cheap corn flowing, guaranteeing that the cheapest calories in the supermarket will continue to be the unhealthiest.

...A one-pound box of prewashed lettuce contains 80 calories of food energy. According to Cornell ecologist David Pimentel, growing, chilling, washing, packaging, and transporting that box of organic salad to a plate on the East Coast takes more than 4,600 calories of fossil fuel energy, or 57 calories of fossil fuel for every calorie of food.

It's no accident that Julia Child appeared on public television - or educational television, as it used to be called. On a commercial network, a program that actually inspired viewers to get off the couch and spend an hour cooking a meal would be a commercial disaster, for it would mean they were turning off the television to do something else.

It's estimated that about 30 percent of the increase in grain prices could be attributed to the decision to embrace biofuels, particularly corn-based ethanol. It has done nothing for climate change and the business is in real trouble now with the collapse of oil prices. It's completely dependent on a dollar subsidy and tariff from the government.

To a very great extent, it's the fast-food industry that really industrialized our agriculture - that drove the system to one variety of chicken grown very quickly in confinement, to the feedlot system for beef, to giant monocultures to grow potatoes. All of those thing flow from the desire of fast-food companies for a perfectly consistent product.

American farmers produced 600 more calories per person per day in 2000 than they did in 1980. But some calories got cheaper than others: Since 1980, the price of sweeteners and added fats (most of them derived, respectively, from subsidized corn and subsidized soybeans), dropped 20 percent, while the price of fresh fruits and vegetables increased by 40 percent.

Of course it's also a lot easier to slap a health claim on a box of sugary cereal than on a potato or carrot, with the perverse result that the most healthful foods in the supermarket sit there quietly in the produce section, silent as stroke victims, while a few aisles over, the Cocoa Puffs and Lucky Charms are screaming about their newfound whole-grain goodness.

Another thing cooking is, or can be, is a way to honor the things we're eating, the animals and plants and fungi that have been sacrificed to gratify our needs and desires, as well as the places and the people that produced them. Cooks have their ways of saying grace too... Cooking something thoughtfully is a way to celebrate both that species and our relation to it.

I think historically modern economics, capitalist economics, tends to erode moral categories... And this is where I think the right gets capitalism wrong. They kind of assume that there is a moral equivalence or moral valence to capitalism, but I tend to think that economics erodes all the kind of cultural taboos and inhibitions and values it comes into contact with.

We're spending, on average, 27 minutes a day cooking and about four minutes cleaning up, so basically about a half hour. Any one of TV shows takes twice as long to watch as that, which I think is very interesting because the main excuse people give for not cooking is they don't have time to cook, but somehow they're finding time to watch other people cook or eat on TV.

The sheer novelty and glamor of the Western diet, with its seventeen thousand new food products every year and the marketing power - thirty-two billion dollars a year - used to sell us those products, has overwhelmed the force of tradition and left us where we now find ourselves: relying on science and journalism and government and marketing to help us decide what to eat.

Organic Oreos are not a health food. When Coca-Cola begins selling organic Coke, as it surely will, the company will have struck a blow for the environment perhaps, but not for our health. Most consumers automatically assume that the word "organic" is synomymous with health, but it makes no difference to your insulin metabolism if the high-fructose corn syrup in your soda is organic.

There's a lot of research that suggests that organic yields are close or superior to conventional yields depending on factors like climate. In a drought year an organic field of corn will yield more - considerably more - than a conventional field; organic fields hold moisture better so they don't need as much water. It simply isn't true that organic yields are lower than conventional yields.

Imagine if we had a food system that actually produced wholesome food. Imagine if it produced that food in a way that restored the land. Imagine if we could eat every meal knowing these few simple things: What it is we're eating. Where it came from. How it found its way to our table. And what it really cost. If that was the reality, then every meal would have the potential to be a perfect meal.

There are some forty-five thousand items in the average American supermarket and more than a quarter of them now contain corn. This goes for the nonfood items as well: Everything from the toothpaste and cosmetics to the disposable diapers, trash bags, cleansers, charcoal briquettes, matches, and batteries, right down to the shine on the cover of the magazine that catches your eye by the checkout: corn.

One of the skills of a journalist, though, is to find people who can teach him what he needs to know. So instead of taking courses, I've been very lucky in that I found teachers - scientists, especially - who were willing to teach me what I needed to know, whether it was about genetically modified crops or how photosynthesis works, and so on. I just find my teachers and don't have to pay for my education.

One surprise is how deeply the food system is implicated in climate change. I don't think that has really been on people's radar until very recently. 25 to 33 percent of climate change gases can be traced to the food system. I was also surprised that those diseases that we take for granted as what will kill us - heart disease, cancer, diabetes - were virtually unknown 150 years ago, before we began eating this way.

This for many people is what is most offensive about hunting—to some, disgusting: that it encourages, or allows, us not only to kill but to take a certain pleasure in killing. It's not as though the rest of us don't countenance the killing of tens of millions of animals every year. Yet for some reason we feel more comfortable with the mechanical killing practiced, out of view and without emotion by industrial agriculture.

The great virtue of a diversified food economy, like a diverse pasture or farm, is its ability to withstand any shock. The important thing is that there be multiple food chains, so that when any one of them fails-when the oil runs out, when mad cow or other food-borne diseases become epidemic, when the pesticides no longer work, when drought strikes and plagues come and soils blow away-we'll still have a way to feed ourselves.

If we address frankly what is evoked by cheese, I think it becomes clear why so little is said. So what does cheese evoke? Damp dark cellars, molds, mildews and mushrooms galore, dirty laundry and high school locker rooms, digestive processes and visceral fermentations, he-goats which do not remind of Chanel ... In sum, cheese reminds of dubious, even unsavory places, both in nature and in our own organisms. And yet we love it.

The other way that you democratize the food movement is through the public school system. If you can pay enough for the school lunch system so that it can actually be cooked and not just microwaved, so that these schools can buy local food, fresh food, because right now it's all frozen and processed, you will improve the health of the students, you will improve the health of the local economy, and you will have better performing students.

A tension has always existed between the capitalist imperative to maximize efficiency at any cost and the moral imperatives of culture, which historically have served as a counterweight to the moral blindness of the market. This is another example of the cultural contradictions of capitalism - the tendency over time for the economic impulse to erode the moral underpinnings of society. Mercy toward the animals in our care is one such casualty.

When we mistake what we can know for all there is to know, a healthy appreciation of one's ignorance in the face of a mystery like soil fertility gives way to the hubris that we can treat nature as a machine. Once that leap has been made, one input follows another, so that when the synthetic nitrogen fed to plants makes them more attractive to insects and vulnerable to disease, as we have discovered, the farmer turns to chemical pesticides to fix his broken machine.

Wrangham cites several studies indicating that in fact humans don't do well on raw food: they can't maintain their body weight, and half of the women on a raw-food regimen stop menstruating. Devotees of raw food rely heavily on juicers and blenders, because otherwise they would have to spend as much time chewing as the chimps do. It is difficult, if not impossible, to extract sufficient energy from unprocessed plant matter to power a body with such a big, hungry brain.

I think that there's some brainwashing going on with this idea that we don't have time to cook anymore. We have made cooking seem much more complicated than it is, and part of that comes from watching cooking shows on television-we've turned cooking into a spectator sport. ...My wife and I both work, and we can get a very nice dinner on the table in a half hour. It would not take any less time for us to drive to a fast-food outlet and order, sit down, and bus our table.

That eating should be foremost about bodily health is a relatively new and, I think, destructive idea-destructive not just the pleasure of eating, which would be bad enough, but paradoxically of our health as well. Indeed, no people on earth worry more about the health consequences of their food choices than we Americans-and no people suffer from as many diet-related problems. We are becoming a nation of orthorexics: people with an unhealthy obsession with healthy eating.

One of the problems is that the US government supports unhealthy food and does very little to support healthy food. I mean, we subsidize high fructose corn syrup. We subsidize hydrogenated corn oil. We do not subsidize organic food. We subsidize four crops that are the building blocks of fast food. And you also have to work on access. We have food deserts in our cities. We know that the distance you live from a supplier of fresh produce is one of the best predictors of your health.

To put it bluntly, we now need to reverse course. We need more highly skilled small farmers in more places all across America - not as a matter of nostalgia for the agrarian past but as a matter of national security. For nations that lose the ability to substantially feed themselves will find themselves as gravely compromised in their international dealings as nations that depend on foreign sources of oil presently do. But while there are alternatives to oil, there are no alternatives to food.

In Joel's view, that reformation begins with people going o the trouble and expense of buying directly from farmers they know - "relationship marketing," as he calls it. He believes the only meaningful guarantee of integrity is when buyers and sellers can look one another in the eye, something few of us ever take the trouble to do. "Don't you find it odd that people will put more work into choosing their mechanic or house contractor than they will into choosing the person who grows their food?"

While it is true that many people simply can't afford to pay more for food, either in money or time or both, many more of us can. After all, just in the last decade or two we've somehow found the time in the day to spend several hours on the internet and the money in the budget not only to pay for broadband service, but to cover a second phone bill and a new monthly bill for television, formerly free. For the majority of Americans, spending more for better food is less a matter of ability than priority. p.187

Is it just a coincidence that as the portion of our income spent on food has declined, spending on health care has soared? In 1960 Americans spent 17.5 percent of their income on food and 5.2 percent of national income on health care. Since then, those numbers have flipped: Spending on food has fallen to 9.9 percent, while spending on heath care has climbed to 16 percent of national income. I have to think that by spending a little more on healthier food we could reduce the amount we have to spend on heath care.

When you're cooking with food as alive as this -- these gorgeous and semigorgeous fruits and leaves and flesh -- you're in no danger of mistaking it for a commodity, or a fuel, or a collection of chemical nutrients. No, in the eye of the cook or the gardener ... this food reveals itself for what it is: no mere thing but a web of relationships among a great many living beings, some of them human, some not, but each of them dependent on each other, and all of them ultimately rooted in soil and nourished by sunlight.

The first thing to understand about nutritionism is that it is not the same thing as nutrition. As the "-ism" suggests, it is not a scientific subject but an ideology. Ideologies are ways of organizing large swaths of life and experience under a set of shared but unexamined assumptions. The ninety-nine cent price of a fast-food hamburger simply doesn't take account of that meal's true cost--to soil, oil, public health, the public purse, etc., costs which are never charged directly to the consumer but, indirectly and invisibly, to the taxpayer (in the form of subsidies), the health care system (in the form of food-borne illnesses and obesity), and the environment (in the form of pollution), not to mention the welfare of the workers in the feedlot and the slaughterhouse and the welfare of the animals themselves.

Our ingenuity in feeding ourselves is prodigious, but at various points our technologies come into conflict with nature's ways of doing things, as when we seek to maximize efficiency by planting crops or raising animals in vast mono-cultures. This is something nature never does, always and for good reasons practicing diversity instead. A great many of the health and environmental problems created by our food system owe to our attempts to oversimplify nature's complexities, at both the growing and the eating ends of our food chain.

Those externalized costs have always included labor. It is only the decline over time of the minimum wage in real dollars that's made the fast food industry possible, along with feedlot agriculture, pharmaceuticals on the farm, pesticides and regulatory forbearance. All these things are part of the answer to the question: Why is that crap so cheap? Our food is dishonestly priced. One of the ways in which it's dishonestly priced is the fact that people are not paid a living wage to process it, to serve it, to grow it, to slaughter it.

When a livestock farmer is willing to "practice complexity"-to choreograph the symbiosis of several different animals, each of which has been allowed to behave and eat as it evolved to-he will find he has little need for machinery, fertilizer, and, most strikingly, chemicals. He finds he has no sanitation problem or any of the diseases that result from raising a single animal in a crowded monoculture and then feeding it things it wasn't designed to eat. This is perhaps the greatest efficiency of a farm treated as a biological system: health.

But carbon 13 [the carbon from corn] doesn't lie, and researchers who have compared the isotopes in the flesh or hair of Americans to those in the same tissues of Mexicans report that it is now we in the North who are the true people of corn.... Compared to us, Mexicans today consume a far more varied carbon diet: the animals they eat still eat grass (until recently, Mexicans regarded feeding corn to livestock as a sacrilege); much of their protein comes from legumes; and they still sweeten their beverages with cane sugar. So that's us: processed corn, walking.
