Cooking at home with fresh ingredients means you know what's going into your food.

If you think of the ice caps as the fridge of our planet, if your fridge at home died, the food you eat would go rotten, and you'd starve.

You can't escape the taste of the food you had as a child. In times of stress, what do you dream about? Your mother's clam chowder. It's security, comfort. It brings you home.

Once you get a spice in your home, you have it forever. Women never throw out spices. The Egyptians were buried with their spices. I know which one I'm taking with me when I go.

Guys, your home should never smell like artificial food: candy canes, gum drops, lemon bars. I mean, I will consume lemon bars in mass quantities, but I don't want my house to smell like one.

If you start eating with your mouth open - I can't stand it! I was out to dinner with a girl, and she started chomping on her food. You could see everything she was eating. I was like, 'So when do you want to go home?'

When I'm filming, survival requires movement. You need your energy, and you've got to eat the bad stuff, and survival food is rarely pretty, but you kind of do it. I get in that zone, and I eat the nasty stuff, but I'm not like that when I'm back home.

It's very different doing a food show in America and doing one in Britain. I did a 20-part series for the BBC series called 'Eating With the Enemy.' The budget for all 20 episodes was probably the budget for a single episode of 'Top Chef.' It's the difference between making a home movie in your backyard and going to Hollywood.
